These Marbled Pumpkin Brownies are to die for! I know many are tired of the “pumpkin spice” everything that hits stores once September rolls around. I know that there is truth to the saying, “too much of a good thing”, but I have to confess… I love pumpkin flavored items. Perhaps it is because Fall is my favorite season. When I see the Pumpkin flavored foods hit the store, I know the leaves will start turning colors, and the air will turn cooler. The below recipe is one that I would like to share. I have modified it over time, and my family loves it!
1 stick (1/2 cup) salted butter, cut into pieces
3 ounces unsweetened chocolate, chopped
3/4 cup sugar
2 large eggs
1/2 teaspoon pure vanilla extract
2/3 cup all-purpose flour
Marbled Pumpkin Cheesecake batter
6 ounces cream cheese, well softened
1/3 cup brown sugar
1 large egg yolk
1/3 cup of pumpkin puree
1 teaspoon pumpkin pie spice
1/4 teaspoon of vanilla extract
1/2 cup bittersweet chocolate chips
Make brownie batter: Preheat oven to 350°F. Grease an 8-inch square baking pan. Heat butter and chocolate in a 3-quart heavy saucepan — I did mine in a double-boiler, by placing the mixing bowl I was using over simmering water, and melting the chocolate over medium to low heat. I whisked occasionally, just until melted. Then, remove from heat and whisk in sugar, eggs, vanilla, and a pinch of salt until well combined. Whisk in flour and spread in baking pan.
Make cheesecake batter: Whisk together cheesecake batter ingredients in a small bowl until smooth. Dollop over brownie batter, then swirl in with a knife or spatula.
Sprinkle chocolate chips over pumpkin cheesecake/brownie batter swirl.
Bake brownies: Bake until edges are slightly puffed and center is set, about 30 minutes. Serve warm or at room temperature. You may also chill the brownies if you prefer.
Mix It Up
I like to modify this recipe by swapping out the pumpkin and pumpkin pie spice for 1/3 cup of peanut butter. It just depends on what you are in the mood for. I hope the Fall season brings back as many happy memories for you as it does for me. It was always my Grandma’s favorite season also.
